Bodegas Garvey of Jerez makes this maritime vermouth on a base of Palomino sherry from the Macharnudo pago. Alongside the usual herbs it macerates seaweed, fucus, codium and ulva, giving a saline, briny aperitif with citrus, rosemary and ginger over a mahogany colour.

Description
Bodegas Garvey works in Jerez de la Frontera, where the chalky albariza soils and Atlantic influence shape the Palomino grape. Vermut Marinero takes that base wine, grown in the Macharnudo pago, and macerates it not only with the usual aromatic herbs but with seaweed, including fucus, codium and ulva, to reproduce the character of the Bay of Cadiz. The Palomino sherry base supplies a dry, faintly nutty oxidative backbone, while the algae bring a genuine saline, iodine note that sets this vermouth apart, and wormwood anchors the bitterness. The colour is a bright, clean mahogany. The nose combines citrus and white fruit with rosemary, ginger, sage and a clear marine note of seaweed and plankton. The palate is fresh and saline, acidic and lightly bitter, the brine pulling against the herbal sweetness. Serve well chilled over ice with a strip of lemon peel, or pour it neat as a coastal aperitif.
