Description
Domaine Garnier et Fils farm in Chablis, in the north of Burgundy between Paris and Beaune, where brothers Xavier and Jérôme took over the family land in 1996 and began making their own wines. Petit Chablis is the appellation's entry tier, grown on the higher, cooler ground around the classed slopes, largely on Portlandian limestone. The cool continental climate and stony soils give the wine its high natural acidity and mineral character, and the grapes ripen at 13% alcohol while keeping their freshness. To preserve that character the wine is fermented and raised in stainless steel with no oak, which keeps the fruit clean, precise and unadorned. The estate is farmed sustainably. The colour is pale straw with green tints. The nose is fresh and direct, with lemon, green apple and pear alongside white flowers and a hint of citrus peel, and the palate is dry and crisp, the orchard fruit carried by a saline, stony line to a clean finish. This is Chablis in its most straightforward, thirst-quenching form. Serve well chilled at 8 to 10 degrees in a white glass.
