Vinas Serranas make Garcibuey from Rufete in D.O. Sierra de Salamanca. The mountain granite soils give a perfumed, lighter red of red cherry, wild herbs and a floral, peppery edge, with thirteen months in barrel.
Description
Vinas Serranas farm in D.O. Sierra de Salamanca, a high, granite-soiled appellation in the mountains south of Salamanca. Garcibuey is made from Rufete, the delicate regional grape that gives aromatic, pale reds with a light frame and fresh acidity. The old vines grow on poor granite and slate at altitude, where warm days and cool nights keep the fruit perfumed and the acidity firm, qualities the variety needs to avoid heaviness. At 14.3 percent the wine carries a little more ripeness than some Rufete, but it stays fragrant. Thirteen months in barrel soften the slender tannins through gentle oxygen exchange and add a light spice, with the oak kept in support of the fruit and florals. Expect a light to medium red with red cherry and raspberry, rose and violet, dried herbs and a peppery, stony finish. The palate is supple with fine tannins and a savoury length. Serve cool at 14 to 16 degrees. It is a wine for poultry, pork and mushrooms rather than heavy roasts, in the manner of a mountain Pinot Noir.
