Galván is a Galician white from D.O. Monterrei, blending 60% Godello with 40% Treixadura. Cold maceration with dry ice draws out aroma before a few months on the lees, giving a fresh, textured wine of pear, white peach and citrus.
Description
Galván comes from Adegas Daniel Fernández in the D.O. Monterrei, an inland Galician appellation near the Portuguese border. It is a blend of two native grapes, 60% Godello and 40% Treixadura, both grown on the winery's own vineyards. Monterrei sits in a warmer, drier pocket than coastal Galicia, which gives fuller fruit, while cool nights preserve acidity and aromatic detail. In the cellar the grapes are destemmed and crushed, then given a cold maceration in which dry ice is added to the tanks to hold the skins at very low temperature. This gentle pre-fermentation step extracts aroma and flavour from the skins without harsh phenolics, a key to the wine's fragrance. After alcoholic fermentation the wine rests on its fine lees in tank for several months, which adds a light creaminess and rounder texture before clarification. The colour is pale straw with green glints. The nose shows ripe pear, white peach and green apple with a floral edge, and the palate is fresh and dry, with a citrus core, a soft lees-derived texture and a clean finish. Serve at 9 to 11 degrees. It pairs well with grilled white fish, shellfish and light salads.
