This is the classic cuvee from Francois Crochet, a biodynamic Sauvignon Blanc grown on the siliceous soils of Bue in Sancerre. It is bright and mineral, with lemon, green apple and elderflower over a saline, stony core.

Description
Francois Crochet is the third generation of his family to farm at Bue, in the western reaches of Sancerre in the Loire. With his wife he tends ten hectares of biodynamically worked vines, planted on the silex and flint soils that define this part of the appellation and give the wines their cut and salinity. Winemaking is kept deliberately simple, with as little intervention as possible so the fruit and the site come through cleanly. Fermentation in temperature-controlled stainless steel locks in aromatics and preserves the natural high acidity that a cool Loire climate delivers, keeping the wine crisp and precise. The colour is pale straw with a green tint. The nose is fresh and lifted, with lemon, green apple and elderflower alongside white flowers and a hint of pear. The palate is taut and mineral, the acidity firm and the finish saline and stony rather than fruity, a direct read of the flint beneath the vines. Serve well chilled at 9 to 10 degrees in a standard white wine glass.
