Foxes Bow is one of the young Irish brands built on sourced stock from the Great Northern Distillery in Dundalk, Co. Louth, and Release 01 was its opening statement, a blended whiskey bottled in 2021 for an event. Like most of the new wave, it stakes its identity on cask work rather than an invented distillery pedigree.
The blend began in ex-bourbon barrels before a finishing period split between Oloroso sherry and rye casks, a combination that folds dried fruit and walnut into peppery grain spice over the toffee base. Bottled at 43%, it is a crossover whiskey for mixing and sipping alike, young spirit wearing its cask work up front in the manner of Ireland's bonder led revival.
