Description
Covenant is Mark XXIII in Foursquare's ECS range, the Barbados distillery's run of limited single blends overseen by Richard Seale, a leading voice for dry, additive-free rum. This is the classic Bajan method of double-retort pot still rum married with cleaner column distillate, a 2005 vintage taken to a generous eighteen years and bottled at a full 58%.
Matured entirely in ex-bourbon oak with no added sugar, colour or flavouring, it rewards attention. Coconut, vanilla and caramel lead into dark chocolate, dried fruit and a firm bed of oak, spice and tannins, finishing warm, woody and roasted. The long maturation deepens the wood and adds a natural underlying sweetness without tipping into sharpness, and at 58% it stays smooth for its strength while keeping the dry Barbados core intact. A serious, oak-driven pour for drinkers who already love bourbon-cask Foursquare and want age and depth turned up.
