Foursquare Doorly’s XO Sherry Finish

Doorly's is the Foursquare house's everyday face, blended and bottled by Richard Seale in St Philip from the distillery's marriage of double retort pot still and column still rum. This XO is finished in oloroso sherry casks and carries no added sugar, which makes it a clean introduction to the classic Bajan idiom rather than a rounded-off mainstream pour.

The pot and column blend gives the medium body that defines Barbados, sitting between light Spanish style ron and heavier Jamaican rum. Expect vanilla, caramel and toasted coconut with soft oak, a thread of sherry dried fruit and a finish that turns woody and lightly spiced. At 40% it stays approachable and easygoing, well suited to anyone leaving sweetened styles behind for a dry, honestly aged Barbados rum that holds its shape neat or in a simple cocktail.
