Description
La Fleur 2 Palmas comes from Bodega Forlong, an organic grower in the sherry country of Andalusia, working with Palomino, the region's classic white grape. The vines grow on albariza, the chalk white soil that holds winter rain deep in the ground and reflects the strong southern sun, giving a base wine of low colour and gentle acidity well suited to biological ageing. The wine spends seventy two months under flor, a natural veil of yeast that forms on the surface in the barrel. The flor lives on the wine and shields it from air, consuming glycerol and oxygen while it releases acetaldehyde and compounds that give the classic pungent, nutty, saline character of flor aged whites. The result is bone dry and pale gold. The nose shows green apple, toasted almond, camomile and a briny, yeasty depth. The palate is sharp, dry and savoury, with real umami weight and a long saline finish. Serve cold at 8 to 10 degrees in a white wine glass. Bottled at 500ml.
