Foradori’s Fontanasanta is a single-variety Manzoni Bianco from Trentino in the Dolomites, aged seven months in acacia barrels. Biodynamic and textured, it shows white peach, pear and white flowers with a chamomile note and a fresh Alpine line.

Description
Fontanasanta Manzoni Bianco comes from Elisabetta Foradori, the Trentino grower known for her work with native varieties and biodynamic farming in the Dolomites of northern Italy. Manzoni Bianco is a cross of Riesling and Pinot Blanc, an aromatic grape that keeps fresh acidity in this cool, high Alpine climate, where wide day-to-night temperature swings preserve perfume and tension. The vineyards are farmed biodynamically, and the wine is vegan and made with minimal intervention. It is aged for seven months in acacia barrels. Acacia is a neutral, tight-grained wood that gives gentle oxygen and texture without the vanilla and spice of oak, letting the grape's floral character and the site's freshness come through; ageing on the lees adds a light savoury weight. The colour is a luminous yellow. The nose is aromatic and floral, with white peach, pear and white flowers over chamomile and a touch of almond and beeswax. The palate is dry, fresh and lightly textured, the acidity keeping it long and precise through a clean finish. Serve at 10 to 12 degrees with white fish, roast chicken or fresh goat cheese.
