Description
Flor de Vetus comes from Verdejo grown in the western part of Rueda, around the villages of Rueda, Serrada and La Seca in Castilla y León. The vineyards sit on a high plateau of stony, sandy and gravelly soils that drain freely, over a subsoil rich in pebbles that reflect heat and aid ripening. The altitude is the key to the style, as warm days and markedly cool nights slow the final ripening and lock in the fresh acidity and aromatic intensity that mark good Verdejo. This is the young, unoaked expression, so the grapes are pressed gently and fermented in stainless steel at controlled temperature to protect the primary fruit and the variety's characteristic herbal, fennel-like character. There is no barrel here, keeping the wine crisp and direct. The colour is pale lemon-yellow. The nose is expressive, with green apple, lemon, ripe melon and white peach lifted by a fresh herbal note and a touch of white flowers. The palate is crisp and dry, the fruit balanced by lively acidity and a clean, slightly bitter finish typical of the grape. Serve well chilled at 8 to 10 degrees. It suits fried fish, seafood and salads.
