Description
Flequi Berruti returns to his native Jerez for the Le Fleq project after making wine in Toledo, Ribera del Duero and Cebreros. This white comes from the Añina pago, one of the historic albariza vineyards of the Marco de Jerez, and blends Palomino Fino with old local varieties Cañocazo, Mantúa and Uva Perruna. It is barrel-fermented, so the wine begins its life in wood, and then aged ten months under flor, the film of living yeast that develops on partly filled casks in the region. The flor feeds on oxygen and glycerol, shielding the wine from oxidation and giving it the saline, yeasty and nutty signature of the Marco de Jerez, while the albariza chalk and Atlantic influence keep it fresh and mineral. Farming is organic. The colour is pale gold. The nose is savoury and mineral, with green apple and lemon over almond, dried herbs and a bread-dough note from the flor. The palate is dry and taut, the orchard fruit and citrus tightened by salinity and a chalky, persistent finish. Serve well chilled at 10 to 12 degrees in a white glass or a copita.
