Description
Fino Una Palma is the youngest wine in the Palmas collection from Bodegas Tio Pepe in Jerez, a series graded by how long each wine has aged under flor. It is made from Palomino grown on the chalky albariza soils of the Jerez region, pale soils that store winter rain and reflect sunlight to ripen the fruit through the long dry summer. After fortification to around 15 to 16 percent the wine ages roughly six years under a veil of flor in the criaderas and soleras system, drawn from very old base wines. While the flor is still vigorous at this stage, it protects the wine from oxygen and feeds on it, giving the bright, dry, yeasty and saline character of a fine Fino, with a touch of nutty depth beginning to show from the years in cask. Only a small number of bottles are released. The colour is golden. The nose is fresh and aromatic, with almond, green apple and lemon over bread dough and a saline note. The palate is bone dry and defined, savoury and precise, finishing long and mineral. Serve chilled at around 9 to 11 degrees in a white wine glass.
