Bodegas Osborne makes this Fino in El Puerto de Santa Maria from lightly pressed Palomino. Aged under a cap of flor yeast in American oak by the soleras method, it is pale and fresh, with green apple, almond and a saline finish.
Description
Fino Quinta is made by Bodegas Osborne in El Puerto de Santa Maria, one of the three towns of the Sherry triangle. The Palomino grapes are lightly pressed and the must is settled for twelve hours before fermenting at a controlled 25 degrees. The wine is then aged biologically under flor, a living cap of yeast that grows on the surface of the wine in the cask, sealing it from oxygen and feeding on alcohol and glycerine. This biological ageing keeps the wine pale, bone dry and fresh, while giving the saline, bready character typical of Fino. Ageing follows the traditional soleras and criaderas method in American oak casks, where younger wine is fractionally blended through older stages to hold a steady house style. The cellars near the Atlantic coast keep humidity high, which helps the flor thrive year round. The colour is pale with a luminous clarity. The nose is fresh and piquant, with crisp green apple and almond over delicate yeasty notes. The palate is dry, saline and invigorating. Serve well chilled at around 7 to 9 degrees in a white wine glass. Drink it as an aperitif or with seafood.
