Tio Pepe makes this Fino Dos Palmas from Palomino in Jerez. Aged more than eight years under flor, it is highly evolved and finely balanced, golden, with almond, toasted bread and a deep saline finish.

Description
Fino Dos Palmas is the second stage in the Palmas collection from Bodegas Tio Pepe in Jerez, a series ranked by length of ageing under flor. It is made from Palomino grown on the chalky albariza soils of the Jerez region, soils that hold winter moisture and reflect heat to ripen the grapes evenly through the dry summer. After fortification to around 15 to 16 percent the wine ages more than eight years under a veil of flor in the criaderas and soleras system, drawn from very old base wines. Over that long ageing the flor gradually thins, so the wine keeps its yeasty, saline core while gaining a fine, complex, slightly evolved character. Only a small number of bottles are released. The colour is golden. The nose is delicate but deep, with almond and toasted bread, chamomile and a savoury, briny note. The palate is bone dry and balanced, with a long, mineral, faintly nutty finish that shows the extra years in cask. Serve chilled at around 10 to 12 degrees in a white wine glass.
