Finca Sandoval Aurora is a white from Manchuela made by Angel Garcia-Cordero with oenologist Javi Revert. Native Albillo aged ten months in barrel and clay jar gives white peach, apricot, a waxy texture and a gentle almond finish.

Description
Finca Sandoval lies in the D.O. Manchuela, in the interior of Castilla-La Mancha, and has been led by Angel Garcia-Cordero since 2017, with Javi Revert among its winemaking team. Aurora is named for his mother and is built around Albillo, a native Spanish white grape prized for its texture and gentle aromatics. The continental climate here brings hot days and cool nights, and the large diurnal range helps the grapes hold acidity while ripening slowly. The wine spends ten months ageing in a mix of oak barrels and clay jars on its fine lees. The lees contact adds body and a savoury depth, while the clay jars allow slow oxygen exchange without the flavour of new wood, so the fruit and texture stay in front. It pours a bright golden straw. The nose shows white peach, apricot and pear with beeswax, chamomile and a light honeyed note. The palate is broad and dry, the lees giving a creamy weight balanced by fresh acidity, and it finishes with a soft almond bitterness. Serve at around 11C in a white wine glass.







Additional information
The texture and gentle stone fruit make it a good match for roast chicken, baked white fish and dishes with cream or butter. It also works with roasted root vegetables and grilled prawns, where the waxy weight balances the char.
