Description
Finca Las Caraballas grows this Chardonnay organically on a 100-hectare estate at Medina del Campo in Castilla y Leon, a project founded by Elias Redondo in 2005 around ecological farming and a working natural environment. The continental plateau here gives warm, dry summers and cold nights, and that wide daily temperature swing lets the grapes build ripe stone and tropical fruit while retaining freshness. Organic management keeps the vineyard and its surrounding habitat active, which the estate treats as part of the wine's quality rather than a label. The wine is made to show varietal fruit clearly, with the emphasis on ripeness and balance rather than heavy oak. The colour is a bright golden yellow. The nose is intense and open, with white peach, melon and ripe pear over citrus and a light floral note. The palate is medium bodied and rounded, the ripe fruit framed by fresh acidity and a soft, gently honeyed finish. Serve at 10 to 12 degrees in a white glass. It suits roast chicken, baked white fish and roasted root vegetables, and has the weight for hard, nutty cheeses.
