Description
Finca La Cabrita comes from the Paraguas project in D.O. Ribeiro, in the green, Atlantic-facing hills of inland Galicia. This is a cool, wet, maritime climate on granite and slate soils, and the wines it produces are light, fresh and low in alcohol, here 11.5 percent. The blend brings together native Galician grapes: Mencía for perfume and red fruit, Caiño Longo for acidity and structure, and Sousón for colour and a savoury edge. The wine is made for early drinking, fermented and bottled young with no oak ageing, which keeps the fruit bright and the texture light. It is medium ruby, with red berry, cherry and redcurrant on the nose, a floral lift and a peppery, stony freshness that reflects the granite soils. The palate is juicy and fresh, the tannins soft, the acidity lively, the finish clean. This is a wine to drink for its freshness rather than its weight. Serve lightly chilled at 14 degrees Celsius. It suits roast chicken, grilled pork and baked salmon.
