Description
Finca Dofí is one of the wines that re founded modern Priorat, made by Álvaro Palacios in D.O.Q. Priorat in Catalonia. It is built around old vine Garnacha Tinta and Cariñena with smaller red varieties, farmed sustainably on the region's defining licorella, the steep slopes of fractured black slate and quartzite. These poor, free draining soils force the vines deep for water and yield tiny, concentrated crops, while the warm Mediterranean climate, tempered by altitude and cool night air, ripens the fruit fully and holds acidity. The licorella is the source of Priorat's signature mineral, smoky depth. The wine is aged nineteen months in French oak, a long élevage that builds structure and complexity through slow oxygen exchange, softening the firm tannins and integrating the wood with the powerful fruit. The colour is deep, brilliant cherry red. The nose shows ripe red fruit, cherry and raspberry, with black pepper, liquorice and a stony, smoky minerality. The palate is full bodied and concentrated, with firm but ripe tannins, fresh acidity and a long, mineral finish. Serve at 17 to 18 degrees and decant for an hour. It rewards roast and braised red meats and game.
