Description
Filipa Pato and William Wouters make this white in the DOC Bairrada in Portugal's Beiras from Bical, one of the region's traditional white grapes. Pato is a chemical engineer and part of the Baga Friends group working to protect Bairrada's authenticity, and the wine is farmed with respect for the land. Calcário is Portuguese for limestone, and the name marks the chalky, calcareous soils the fruit is grown on. Limestone reflects light, drains well and holds cool water at the roots, which preserves acidity and gives the mineral, saline character that runs through the wine; Bical is naturally high in acid and suits this cool Atlantic-influenced site. The wine is fermented and aged in wood, used barrels rather than new, so the oak works as a vessel that adds texture and slow oxygen exchange without covering the fruit or the chalk. It pours pale lemon. The nose is taut and citrus-driven, with lemon, green apple and white peach over white flowers and a chalky, saline note. The palate is dry and linear, the fresh acidity carrying a stony, almost salty finish with a faint almond edge. Serve cold at 9 to 10 degrees.
