Dynámica Bical is a biodynamic white from Filipa Pato and William Wouters in Bairrada, made from the native Bical grape and aged on its lees. Fresh and Atlantic, it shows green apple, citrus and white flowers over a stony, saline finish.
Description
Dynámica Bical comes from Filipa Pato and William Wouters, working with the native Bical grape in the DOC Bairrada, in the Beiras of central Portugal. Filipa Pato, daughter of Baga pioneer Luís Pato, built her project on close study of the region's soils, microclimates and varieties. Bairrada lies close to the Atlantic, and its maritime climate brings cool, damp conditions and a long ripening season that keep Bical's acidity high and its fruit precise, while the area's limestone and clay soils give the whites a stony backbone. The wine is farmed biodynamically and aged on its lees with minimal intervention, the lees contact adding a light texture and breadth while retaining the grape's natural freshness and holding back any oak character. The colour is pale straw with green tints. The nose is fresh and floral, with green apple, lemon and white peach over white flowers and chamomile. The palate is dry, taut and mineral, finishing with a saline, stony grip. Serve at 9 to 11 degrees. It is well suited to shellfish, grilled white fish and fresh salads.
