Description
Dynamica Baga is a red from DOC Bairrada in the Beiras of Portugal, made biodynamically by Filipa Pato and William Wouters from the native Baga variety. Filipa Pato, daughter of Baga specialist Luis Pato, works to authentic wines without makeup, drawn from a close reading of the local terroir and climate. Bairrada lies close to the Atlantic, and its cool, damp maritime climate keeps Baga high in acidity and firm in tannin, while the clay-limestone soils add structure and freshness. This is the lighter, more immediate expression of the grape, picked to keep the fruit bright and the alcohol modest at 12.5 per cent. The wine is aged in used oak, which softens the naturally taut tannins through slow oxygen exchange without adding obvious wood character, keeping the focus on fruit and acidity. The colour is bright ruby. The nose shows wild strawberry, red cherry and plum over a hint of liquorice, black pepper and Mediterranean herbs. The palate is light to medium bodied and fresh, with crisp acidity, fine grainy tannins and a clean, savoury finish. Serve lightly cool at 14 to 15 degrees. It suits roast pork, poultry and tomato-based dishes.
