Filloxera and Cia makes Mujer Caballo Azul in Utiel-Requena from a near forgotten local grape, farmed sustainably. Eight months in oak with lees ageing give floral red fruit, a light toast and a fresh, supple palate.
Description
Mujer Caballo Azul is a red from the D.O. Utiel-Requena in Valencia, made by Filloxera and Cia from a rare native variety grown under respectful, sustainable farming. Utiel-Requena is a high inland plateau where vineyards sit at altitude, and the cool nights against warm days keep the aromatics fresh and the acidity lively. The wine was aged on its lees for eight months in oak barrels. Lees ageing, the slow contact with spent yeast cells, releases mannoproteins that add texture and a soft, rounded mouthfeel, while the barrel lends a light toast and gentle spice without dominating the fruit. The colour is bright ruby. The nose is floral and lifted, with blossom petals, ripe red fruit and a subtle toasted, balsamic edge, while the palate is medium bodied and supple, with fine tannin, fresh acidity and a clean finish. The result is a perfumed, fruit driven red that stays light on its feet. Serve slightly cool at 16 degrees. It pairs well with roast chicken and pork.
