A 30 year old Fettercairn from the Pitlochry bottler Signatory Vintage, distilled in 1995, from cask 2831, bottled at 58.5%, one of 223 bottles. Fettercairn is a Highland single malt shaped by the unique cooling rings on its stills. It was the second distillery licensed in Scotland after the Excise Act of 1823.
It was run through the water cooled stills for a light, tropical make, giving the light, pineapple led Highland spirit. A refill bourbon hogshead held it, keeping the light, tropical character to the fore. Ethereal and fragile, decades draw the fruit to a honeyed, resinous depth of sotolon, coffee and old oak. Refill oak lets the light, tropical Fettercairn character lead the way. It was founded in 1824 by Sir Alexander Ramsay, who turned a corn mill at Nethermill into a distillery. Long ageing turns the fresh tropical fruit towards dried mango, coffee and a soft spice.
At cask strength 58.5% it is full bodied. Pineapple, citrus and a soft vanilla, with a soft vanilla from the oak. It is fruity and tropical, the light spirit shining through. The finish is rounded, tropical and gently spiced. This is Fettercairn, one of Scotland's oldest licensed distilleries.
