    A 29 year old Fettercairn from the Pitlochry bottler Signatory Vintage, 1995, at 59.8%. Soft tropical fruit and a gentle honey. Its make matures on site in dunnage warehouses. Owned by Whyte and Mackay since 1973. Fettercairn is a Highland malt from the foot of the Cairngorms in Aberdeenshire. This is the light, fruit driven malt of Fettercairn.

    From the Pitlochry bottler Signatory Vintage, a 29 year old Fettercairn, distilled in 1995, from cask 2824, bottled at 59.8%, one of 211 bottles. Fettercairn is a light, fruit driven Highland single malt from the village of Fettercairn. The cooling rings raise reflux and copper contact, so only the lightest vapours rise, for a tropical spirit.

    The spirit was worked through the cooling ring stills for a clean, fruity make, for a clean make of pineapple and citrus. A bourbon barrel held it, the wood adding a light vanilla to the fruit. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, coffee tinged fruit. The light, fruity make takes cask flavour well while keeping its pineapple and citrus. It uses unpeated malt and matures mostly in American oak ex-Bourbon casks. After Ramsay lost his fortune, the Fasque estate passed to the Gladstone family in 1829.

    Bottled at a cask strength 59.8%, it is rich. A light, tropical sweetness, with a soft vanilla from the oak. Soft tropical fruit and a vanilla sit behind the cask. A long, fruity finish carries a tropical fruit and a soft spice. This is a fruity, tropical Highland single malt.
