Fettercairn 27 Years Old 1995 Whisky Sponge (Decadent Drinks)

A Fettercairn of a 27 year old chosen by the bottler Decadent Drinks, distilled in 1995, bottled at 61.3%, one of 174 bottles. Fettercairn is a light, fruit driven Highland single malt from the village of Fettercairn. Its water comes from springs in the Grampian and Cairngorm mountains above the distillery.

It was worked through the cooling ring stills for a clean, fruity make, giving the light, pineapple led Highland spirit. First fill bourbon gave a fuller vanilla and a touch of coconut from the lactones. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, coffee tinged fruit. The clean, fruity spirit shows the cask clearly, vanilla and fruit to the fore. Maturation on site in the Fettercairn dunnage warehouses is slow and steady. Active wood frames the fruit without overwhelming the light Highland spirit.

At a hearty 61.3% it carries real weight. Pineapple, citrus and a soft vanilla, with a soft vanilla from the oak. Beneath it run pineapple, citrus and a soft vanilla. The close is light and warming, fruit over a gentle oak. This is Fettercairn's pineapple led Highland style.
