A 16 year old Fettercairn, a distillery bottling, at 46.4%. Fettercairn is a Highland single malt whose tropical character comes from water cooled stills. Its stills carry unique cooling rings, copper tubes that drench them in cold mountain water.

Made on mountain water with the stills drenched in cold water, building the tropical Fettercairn style. Finished in an Oloroso cask, the wood building over the fruity, light spirit. At oxidative maturity vanillin and lactones are fully expressed, the fruit deepening over a soft spice. Long ageing turns the fresh tropical fruit towards dried mango, coffee and a soft spice. It uses unpeated malt and matures mostly in American oak ex-Bourbon casks. The cool Highland air of the Mearns gives a slow, even maturation in the dunnage warehouses. The light, fruity make takes cask flavour well while keeping its pineapple and citrus.

At 46.4% it is clean and soft. A light, tropical sweetness, with dried fruit, fig and walnut from the cask. A dried fruit and a soft oak give it depth. Citrus, fruit and a soft oak see out the finish. This is Fettercairn's pineapple led Highland style.
