From the Elgin house Gordon and MacPhail, a 15 year old Fettercairn, distilled in 2007, from cask 18605403, bottled at 58.9%. Fettercairn is a light, fruit driven Highland single malt from the village of Fettercairn. Its stills carry unique cooling rings, copper tubes that drench them in cold mountain water.

It was made on mountain water with the stills drenched in cold water, for the tropical, fruity make Fettercairn is known for. Finished in an Oloroso cask, the wood building over the fruity, light spirit. Through oxidative maturity esters concentrate, the tropical fruit turning honeyed and a roasted coffee creeping in. The water cooled stills give a light spirit that ages with grace. The light, fruity make takes cask flavour well while keeping its pineapple and citrus. It was founded in 1824 by Sir Alexander Ramsay, who turned a corn mill at Nethermill into a distillery.

At 58.9%, undiluted, it is deep and tropical. Pineapple, pear and a creamy vanilla, with dried fruit, fig and walnut from the cask. Soft tropical fruit and a vanilla sit behind the cask. Citrus, fruit and a soft oak see out the finish. This is a light, tropical Highland single malt.
