Description
A Fettercairn of a 14 year old chosen by the bottler The Whisky Chamber, distilled in 2011, from cask TWC 0334, bottled at 59.4%, one of 207 bottles. Fettercairn is a Highland single malt whose tropical character comes from water cooled stills. Its stills carry unique cooling rings, copper tubes that drench them in cold mountain water.
It was run through the water cooled stills for a light, tropical make, for the tropical, fruity make Fettercairn is known for. Maturation came in an Oloroso cask, layered over the tropical Fettercairn make. By the integrating teens congeners fade and esters build, the tropical, fruity spirit growing rounder. Long ageing turns the fresh tropical fruit towards dried mango, coffee and a soft spice. It has been owned by Whyte and Mackay since 1973. The cooling rings give a light spirit, so the cask brings depth over the years.
At a natural 59.4% it is full and fruity. A clean, fruity sweetness, with dried fruit, fig and walnut from the cask. A dried fruit and a soft oak give it depth. The finish is rounded, tropical and gently spiced. This is the light, fruit driven malt of Fettercairn.
