A Fettercairn of a 12 year old chosen by the Glasgow bottler North Star Spirits, distilled in 2006, bottled at 57.4%, one of 180 bottles. Fettercairn is a fruity Highland single malt made at one of Scotland's oldest licensed distilleries, founded in 1824. The cooling rings raise reflux and copper contact, so only the lightest vapours rise, for a tropical spirit.
Distilled from unpeated malt in stills cooled by their copper rings, for a clean make of pineapple and citrus. An ex-Bourbon barrel shaped it, vanillin lending vanilla under the pineapple. By the integrating teens congeners fade and esters build, the tropical, fruity spirit growing rounder. Maturation on site in the Fettercairn dunnage warehouses is slow and steady. The cool Highland air of the Mearns gives a slow, even maturation in the dunnage warehouses. A Scottish oak project has planted thousands of native oak saplings beside the distillery.
Bottled at a cask strength 57.4%, it is rich. A clean, fruity sweetness, with a soft vanilla from the oak. Soft tropical fruit and a vanilla sit behind the cask. The close is light and warming, fruit over a gentle oak. This is Fettercairn's pineapple led Highland style.
