A Fettercairn of an 11 year old chosen by the bottler The Whisky Chamber, distilled in 2006, from cask 107731, bottled at 56.8%, one of 222 bottles. Fettercairn is a Highland single malt whose tropical character comes from water cooled stills. Its stills carry unique cooling rings, copper tubes that drench them in cold mountain water.
It was worked through the cooling ring stills for a clean, fruity make, building the tropical Fettercairn style. An ex-Bourbon barrel shaped it, vanillin lending vanilla under the pineapple. Integration folds eugenol (clove) and vanillin (vanilla) into the fruit, the body softer and fuller. Mountain spring water and the cooling rings give the tropical Fettercairn make. American oak suits the tropical make, lending vanilla and coconut over the fruit. The light, fruity make takes cask flavour well while keeping its pineapple and citrus.
At 56.8%, undiluted, it is deep and tropical. Pineapple, mango and a gentle honey, with a soft vanilla from the oak. The mouthfeel is clean, the fruit carried on a light body. The finish is rounded, tropical and gently spiced. This is a Highland single malt of real character.
