Maison Ferroni of Provence bottles craft cask-strength Brut de Fut rums, unsweetened and often double-matured in southern France in ex-sweet-wine casks. This Foursquare comes from the celebrated St Philip distillery of Richard Seale, vintage 2006 and presented as an overproof single cask at a formidable 66.1% without added sugar. Foursquare blends rich double-retort pot still with cleaner Coffey column rum for its balanced Bajan profile, typically toffee, brown sugar, ripe banana and vanilla over soft spice. At 66.1% this is a powerful, concentrated expression where that profile arrives with real intensity and warmth, and Ferroni's Provence finishing can add a layer of dried fruit or sweet-wine depth. A bold, dry, full-proof Barbados single cask that calls for a little water.
