Description
Felix Callejo Seleccion de la Familia is a red wine from D.O. Ribera del Duero, drawn from a strict selection of Tinto Fino vines over 40 years old across 25 family vineyards. The plots sit on three soil types, limestone, clay loam and sandy gravel, which each lend a different nuance to the same grape. The region has a harsh continental climate at altitude, with cold nights through ripening that preserve acidity and colour in the thick-skinned fruit. The grapes ferment with indigenous yeasts at low temperature rising to 30 degrees, with more than 15 days of maceration on the skins to draw colour, tannin and structure. Malolactic fermentation takes place in new French oak, where the wine then ages 15 months, softening the malic acidity and adding cedar, vanilla and toast. It is deep, almost opaque red, with blackberry, dark cherry and plum, liquorice, earth and a fine oak spice. The palate is full bodied and structured, with concentrated fruit, firm but ripe tannin and a long, savoury finish. Serve at 17 to 18 degrees and decant. It suits roast lamb, grilled beef and aged cheese.
