Description
Fedellos do Couto is a young estate founded in 2013 in the Ribeira Sacra of Galicia, farming four hectares of native vines between the Bibei valley and the Sil river on respectful, traditional lines. This wine is made from Bastardo, the grape known in the Jura as Trousseau, which gives pale, perfumed and lightly structured reds. The Ribeira Sacra is defined by its steep terraces of decomposed granite and slate dropping to the rivers, soils that drain hard and, with the cool Atlantic-influenced climate and a marked day-to-night temperature swing, keep the fruit fresh and the alcohol low. The wine is fermented with native yeasts and aged in old wood that lets the tannin settle through gentle oxygen exchange without adding oak flavour. The colour is light translucent ruby. The nose shows fresh raspberry, cherry and redcurrant with a subtle hint of spice and a savoury, earthy edge, and the palate is light and fluid, at 11.8 percent, with delicate tannin, bright acidity and a clean finish. This red takes a light chill. Serve at 13 to 15 degrees with roast poultry, pork or mushroom dishes.
