Description
Iago Garrido and Liliana Fernández built Fazenda Agrícola Augalevada from a small Galician furancho into the first certified biodynamic winery in DO Ribeiro, in Atlantic Spain. Ollos branco is a field style blend of Albariño, Godello and Treixadura, the classic grapes of Ribeiro, grown on granite soils under a cool, damp Atlantic climate that gives the wine its high acidity and salinity. The three varieties add up to more than any one alone: Treixadura brings orchard fruit and body, Albariño lends stonefruit and salinity, and Godello adds structure. The wine is fermented and aged in clay amphorae, which allow gentle oxygen exchange without adding oak flavour, building a fine texture while keeping the fruit pure and the style honest. The colour is pale lemon. The nose reveals green apple, lemon and a hint of peach, with white flowers and a stony edge. The palate is dry, fresh and lightly textured, the citrus and orchard fruit carried by bright acidity and a saline, mineral finish. Serve well chilled at 8 to 10 degrees. It suits grilled white fish, shellfish, green salads and fresh goat cheese, an Atlantic white built for the table.
