The Fasoli brothers farm organically and biodynamically in the Veneto. Their Soave Borgoletto is pure Garganega, unoaked and fresh, showing apple, pear, almond and the grape’s gently bitter, mineral finish.
Description
Fasoli Gino is a fourth generation family estate and a benchmark for organic and biodynamic farming in the Veneto, in northern Italy, where they even keep geese to control weeds and enrich the soil. Their Borgoletto is a classic Soave, made entirely from Garganega, the region's native grape. The vineyards sit on a mix of volcanic and limestone soils that give Soave its characteristic minerality and a subtle bitter almond twist on the finish. A temperate climate with good airflow keeps the fruit fresh and disease pressure low, which suits the low intervention approach. The wine is made without oak, so Garganega's delicate character leads, and it drinks bright and unforced in its youth. The colour is pale straw with green highlights. The nose shows apple, pear and white blossom, with a signature note of almond. The palate is dry, light to medium bodied and crisp, the orchard fruit closing on a stony, gently bitter finish that marks good Soave. Serve well chilled at 8 to 10 degrees. It suits grilled white fish, shellfish, green salads and creamy mushroom dishes such as risotto.
