Description
Fasoli Gino is a Veneto estate that converted to organic farming in the early 1980s, well ahead of its neighbours, and is now run by the fourth generation. This Bardolino is built from the classic Valpolicella and Bardolino trio of Corvina, Corvinone and Rondinella, grown on the morainic gravel and clay soils left by glaciers near Lake Garda. The lake moderates the climate and keeps nights cool, preserving acidity and the bright red-fruit profile that defines the appellation. The wine is vinified and held six months in stainless steel only, with no oak, so fermentation and cool tank ageing keep the fruit primary, the colour pale and the tannin light. Expect a bright ruby colour and a nose of sour cherry, red berries and red currant with a peppery, herbal note. The palate is light bodied and fresh, with crisp acidity, gentle tannin and a clean, savoury finish. This is an everyday red to serve lightly chilled at 14 to 16C. It works with charcuterie, roast chicken, grilled pork and tomato-based pasta, and can stand in for a white alongside meatier fish.
