Famille Ricci's South Pacific Zodiac Capricorne is a single cask Fijian rum from the 2014 vintage, ten years old and bottled by the French house known for its zodiac themed selections. Pot distilled and matured in ex-bourbon, it arrives at a formidable 67.1% cask strength, unsweetened.
Fiji's pot still character shows in a profile that is fruity and aromatic beneath the high proof, vanilla, floral and coconut notes with a fresh edge on the nose, then woody caramel, candied fruit and a creamy texture on the palate, finishing woody, peppery and spiced. At this strength water is essential to coax it open, after which the tropical fruit and oak come into balance. Bottled without sweetening at full proof, it is an intense, characterful single cask, one for experienced drinkers who relish high strength island rum with real depth.
