Famille Ricci's 7th Symphony blends two distinct rums, fresh cane agricole from Bielle on Marie-Galante and molasses based Foursquare from Barbados, into a 49% bottling aged across several small wooden casks. The mix of cane juice and molasses, pot and column distillate, makes for a characterful crossover at a friendly price.
After its base ageing the blend rests in a range of small casks, and the result is dry and wood led, with coconut, vanilla and honey on the nose, yellow fruit and coconut on the palate, and cinnamon and dark chocolate on the finish. The molasses side lends coconut and vanilla while the agricole brings a fresher, more vegetal lift, and the varied wood adds layers without tipping into sweetness. It rewards drinkers curious to taste how agricole and Barbados rum interact in a single glass.
