Description
Domaine Famille Grossot works eighteen hectares of vineyard mainly around the village of Fleys, east of the town of Chablis, and is now run by the third and fourth generations of the family under Ecocert organic certification. This is their village Chablis, Chardonnay from the Kimmeridgian soils that define the appellation. Those soils are a mix of clay and limestone packed with fossilised marine shells, and they give Chablis its cool, saline, stony character. The climate here is cool and continental, which preserves the high natural acidity and keeps the fruit tight and citrus-driven. The wine sees no new oak, so nothing stands between the grape and the site. The colour is pale with green tints. The nose is precise, with lemon, green apple and pear over white flowers and a chalky, mineral edge. The palate is dry and taut, with a saline, stony finish that is the signature of the soils. This is Chablis in its clearest form, made for the table rather than the cellar. Serve well chilled at 8 to 10 degrees.
