Familia Torres grows Sauvignon Blanc at 550 metres at Finca Fransola in high Penedes. Partly fermented in new French and American oak and aged eight months, it marries green Sauvignon aromatics with a creamy, oak framed palate.

Description
Fransola is a barrel fermented Sauvignon Blanc from the D.O. Penedes, made by Familia Torres from a single site, the Finca de Fransola at Santa Maria de Miralles. The vineyard lies at 550 metres, high enough that cool nights and a wide diurnal range preserve Sauvignon's aromatic freshness and acidity where a warmer site would lose them. Part of the wine is fermented in new French and American oak barrels and then aged for eight months, a method that differs from the usual tank only Sauvignon: barrel fermentation binds the oak into the wine and softens it, while the months on lees release mannoproteins that add a creamy texture and a bready depth, tempering the grape's sharper edges. The nose keeps the varietal signature of elderflower, green apple and citrus but gains white peach, vanilla, toast and fresh dough from the oak and lees. The palate is fuller and rounder than a typical Sauvignon, with a long finish. Serve at 10 to 12 degrees in a larger white glass. It suits richer fish, poultry and pork.
