Falernum Seven Keys is a spiced liqueur made by Perola in Germany, a Caribbean inspired bottling at 15%. Falernum has its origins in the Caribbean as a fixture of tropical cocktail culture, and Seven Keys reads the style through its signature combination of citrus, almond, ginger and exotic spice. It is built sweet, spicy and refreshing in roughly equal measure, a syrupy spiced liqueur designed to work as a building block behind the bar.

The nose is intense lime, clove, almond and ginger, while the palate is sweet and round with spicy notes, citrus fruit, cinnamon and a light nuttiness, finishing smooth, spicy and slightly syrupy with a long citrus note. In a drink it brings sweetness, a spiced and nutty backbone and a citrus lift, the exact function that ties a rum build together, which is why falernum is indispensable in tiki. It carries classics such as the Mai Tai, the Zombie and Corn n Oil, and works in spritz variations or with soda and lime as a summer aperitif. Keep a bottle on the tiki station as the spice and almond note behind the rum.
