The Great Northern Distillery in Dundalk, Co. Louth, founded by John Teeling in 2015 in the old Great Northern Brewery, supplies much of modern Irish whiskey, and its grain spirit, distilled on column stills, is clean, sweet raw material for imaginative casks. This 2016 vintage was selected by Irish Whiskeys, the German independent behind the Fairy Casks release, and bottled in 2023 at 7 Years Old for the German market.
Ex-Bourbon barrels built the base of toffee, coconut and soft banana before a finish in a Chardonnay cask from the German winery Eppelmann layered in white orchard fruit and a buttery, gently vinous note. Bottled at its full cask strength of 61.5%, it carries grain whiskey's easy sweetness with unusual grip, one of 303 bottles.
