Fabio Coullet makes this vermouth in the Axarquía hills of Málaga from aged D.O. Málaga wines, macerated with bitter plant extracts, Ceylon cinnamon and Indonesian cloves. Caramel red in colour, it balances sweet and bitter over herbaceous fennel and rosemary.
Description
Fabio Coullet works in the Axarquía region of Málaga, in southern Spain, where a warm coastal climate and the steep slopes of the Sierras de Málaga shape the wines. His vermouth is built on aged wines from the D.O. Málaga-Sierras de Málaga, a region long associated with sweet and sun ripened styles, which gives the base wine ripeness and depth before flavouring. To that he adds bitter plant extracts, Ceylon cinnamon, Indonesian cloves and other sweet spices, alongside the wormwood and aromatic herbs that define vermouth. The maceration draws bitter and aromatic compounds into the wine, and caramelised must lends sweetness and the colour, with the wine made under a sustainable, respectful approach to the land. The colour is an attractive caramel red. The nose is intensely aromatic, herbaceous with fennel and rosemary lifted by warm cinnamon and clove. The palate shows a rich harmony of sweet and bitter, the spice and herbs framing the ripe, slightly raisined fruit of the Málaga base into a warm finish. Serve over ice with orange as an aperitif, or at cool cellar temperature after a meal. It suits charcuterie and aged cheese.
