Fabien Jouves makes this natural red from Malbec and Cabernet Franc grown biodynamically on the Trespoux slopes above Cahors. Carbonic maceration keeps it fruity and fresh, with cherry, wild berry and a peppery edge over light tannin.

Description
Fabien Jouves founded Mas del Périé in 2006 and farms his plots on the limestone causse of Trespoux, on the high ground above Cahors in south west France. The vineyards are worked biodynamically and the wine is made with no added oenological products. This Vin de France blends Malbec and Cabernet Franc through carbonic maceration, where whole bunches ferment intracellularly inside intact berries before pressing. That method extracts colour and bright fruit while leaving tannin soft, giving the wine its juicy, refreshing character. There is no oak ageing, so the fruit and the cool limestone freshness stay in the foreground. The colour is bright crimson. The nose leads with cherry and fresh red berries, with redcurrant and a touch of black pepper behind. The palate is light bodied and crunchy, the tannins fine and the acidity lively, closing on red fruit and a savoury, earthy note from the soil. Serve lightly chilled at around 14 degrees, which suits its carbonic style. It works as an everyday red alongside charcuterie, roast pork or mushroom dishes.
