Description
Fabien Jouves farms his family estate on the Trespoux slopes at the highest point of Cahors, in France's Southwest, reaching up to 350 metres. The vineyards sit on limestone and clay over the region's Kimmeridgian and iron-rich soils, and the altitude brings cool nights that slow ripening and hold acidity, which is why this Malbec stays fresh at 12.5 percent rather than turning dense and dark. Jouves is Biodyvin and Demeter certified and works the vineyard biodynamically, with no chemical inputs. This cuvée is fermented and aged in clay amphorae, a neutral, slightly porous vessel that allows gentle oxygen exchange without any oak flavour, so the fruit and soil character come through directly and the tannins settle into a fine, dusty grip. The wine is a mid-depth ruby. The nose shows wild raspberry, red cherry and plum over dried herbs and warm earth. The palate is light to medium bodied and unforced, with juicy red fruit, a peppery lift and a stony, savoury finish. Serve at 15 to 16 degrees, and open it half an hour ahead. It suits charcuterie, roast pork and mushroom dishes.
