Description
Ezio Cerruti made this dry white from Moscato in Piedmont, working around 7 hectares at Castiglione Tinella in the province of Cuneo. Moscato is grown here almost entirely for sweet and sparkling wine, so a still dry version is an unusual reading of the grape. The vines run up to 60 years old and sit on calcareous, sedimentary soils, which give the fruit a firm acid frame and a saline lift that balance Moscato's naturally heady perfume. Fermented fully dry, the wine keeps the grape's floral aromatics while losing the sugar, so the perfume arrives without any sweetness on the palate. The result carries the table grape and orange blossom character of the family without turning into a dessert style. The colour is deep straw gold. The nose is white peach, apricot, rose and elderflower with honey and citrus peel, and the palate is dry, textured and faintly herbal, with a sage edge and a long, bittersweet finish that stops it from feeling soft. Serve at 10 to 12 degrees in a white wine glass.
