From the Asahikawa Distillery in Japan, Etsu's Pacific Ocean Water edition does just what its name promises: water drawn from the Pacific goes into the gin, lending a subtle maritime minerality and clarity you can taste. Around it sit Asian-leaning botanicals, juniper alongside yuzu, bitter orange and liquorice, distilled with the brand's characteristic restraint.
The nose is fresh with yuzu and bitter orange, juniper and floral accents over fine herbal spice. The palate is elegant and balanced, Japanese citrus and gentle spice carried on a clean mineral freshness, finishing long with a faint salt-air note. Serve it with a neutral tonic and a twist of yuzu or lemon peel; it sits beautifully alongside sushi or grilled fish.
