La Fillaboa 1898 is a single-estate Albariño from Bodegas Fillaboa in Rías Baixas, made from 100% Albariño and held 78 months on its lees. That long ageing builds a saline, textured white of lemon, white peach and almond.

Description
Fillaboa is one of the largest and most historic estates in Rías Baixas, in Galicia, on the north-west coast of Spain. La Fillaboa 1898 is made entirely from Albariño grown on the property, in a maritime climate of high rainfall and cool Atlantic air that keeps the grape's naturally high acidity intact. The wine's defining feature is 78 months on its lees, an unusually long élevage for Albariño. Over that time the spent yeast cells break down and release mannoproteins into the wine, which soften the acidity, build a fuller, creamier texture and add a savoury, bready complexity that a young Albariño does not have. The result reads less as a fresh coastal white and more as a mature, structured one, while still keeping the grape's citrus drive and salinity. The colour is straw-yellow with golden highlights, clean and bright. The nose is deep, with lemon, white peach and pear over almond and a distinct saline, briny note. The palate is dry and full for the grape, the long lees ageing giving weight and a mineral, salt-tinged finish. Serve at 10 to 12C in a larger glass to let it open.
