Escarpment makes this Chardonnay in Martinborough, on New Zealand’s North Island. Warm days and cool, humid nights and eleven months in barrel give a mineral, complex white of grapefruit, white peach, hazelnut and toast.

Description
Escarpment is based in Martinborough, one of the leading wine districts of the Wairarapa on the North Island of New Zealand, with Tim Bourne making the wines and Rowan Hoskins tending the vines. The area has a relatively warm, dry climate, but cool nights bring humidity and drop the temperature in the vineyards, slowing ripening and preserving acidity and aromatic detail. This Chardonnay is aged eleven months in barrel and a further four months in stainless steel. Barrel ageing, with slow oxygen exchange through the wood, malolactic conversion of sharp malic acid to softer lactic acid, and time on the lees, builds a creamy texture, a toasty complexity and a light struck-match minerality, while the stainless-steel period keeps the fruit fresh and defined. The colour is bright gold. The nose is varied and layered, with grapefruit and other citrus, white peach, hazelnut, toasted bread and a vanilla note from the oak. The palate is mineral and complex, the creamy weight balanced by a firm acid line and a long, saline finish. Serve at around 12C in a white wine glass.







Additional information
The creamy weight and toast suit roast chicken, baked salmon and lobster in butter. It also pairs well with hard nutty cheeses such as Gruyere and cheddar, and with dishes in a light cream sauce.
